if a person took a product without paying out of the store like walmart would the sensors at he exit ring because of the barcode has not being scanned

Store antishoplifting devices rely on a small electronic circuit that resonates when it passes near the detection system by the exit doors. That resonance can then be detected. While it is possible to embed the circuit into a barcoded label, it is far more common for the circuit to be inside a small rectangular package that is hidden inside the merchandise. It has nothing to do with the barcode itself. The checkouts have a device that is capable of overloading and burning out the circuit so that it is no longer detectable. When you see the cashier slide your item back and forth across the counter, that is what they are doing.
