that you create a barcode for your product for tracking purposes? How does one go about getting this barcode created?

It depends on retailer need or not.And If you want to use barcode,it need to apply your own barcode for goverment.

UPC / EAN bar-codes are needed to sell products in the supermarkets. It really depends on the retailer if they insist that every individual item is bar coded or they would themselves add barcode labels.
Barcode numbers are issued by the organization called GS1 that has branches in every country. Here is the list of the offices:

Once you have barcode number you can generate a barcode image using this site:
barcoderobot.com
